Chef Veronica at Anthem Lakes

Chef Veronica "Vee" Majors
Certified Executive Chef & Culinary Specialist

Chef "Vee" Majors is the flavor specialist directing all dining experiences at the Anthem Lakes Community. She is responsible for designing our custom nutrition plans and menus for all levels of dining at the community. Country Club dining offers meal time options and seasonally-inspired menus.

Most recently, Vee served at The University Club, a private social and fining dining organization owned by Club Corp. Prior to The University Club, she held various management and executive chef positions with Impact Church, the World Golf Village Renaissance Resort in St. Augustine as well as Callaway Gardens & Resort in Pine Mountain, Georgia.

Vee has been recognized with the American Culinary Federation's President's Medal of Professionalism. Vee holds a food service management certificate from the American Culinary Federation and is a master food and nutrition educator, as certified by the University of Florida Institute of Food and Agricultural Science. She earned a certificate of art from Johnson and Wales Culinary School in Garde Manger and has earned additional certifications for service, sanitation and culinary skill from various institutions across the nation.

During her time with The University Club, Vee was named one of the company's Top 10 executive chefs worldwide, with ClubCorp International, who is the leader in private club, business, golf and country management & operations.

Mary Pinelli, Memory Care Director of Anthem Lakes has had a life long passion of caring for our seniors. She was greatly influenced by her mother who was a nurse for more then 40 years caring for the elder population. Mary obtained her nursing license at the age of 19 and has been practicing in the Elder Care field ever since.

She was employed as a staff nurse for the State of New Jersey Disabled Veterans Home for 10 years. With a relocation to the sunshine state she secured a position with Alterra Clarebridge of Dr Phillips and managed this free standing 40 bed Memory Care Community for 5 years seeing it thru 2 transitions of ownership. Mary chose a different path for her career and took a position with AIG as a Nurse Case Manager for 4 years but realized her true passion was our seniors and Memory Care. Returning to Clarebridge, now owned by Brookdale she resumed her prior position as Resident Care Coordinator for an additional 5 years.

Her recent relocation to the Jacksonville area gave her the opportunity to hold a management position with Arbor Terrace of Ortega adding to her Memory Care experience. Mary is Fl AL CORE certified and has extensive knowledge and experience with LNS/ECC regulations.

After over 10 years in Sales & Marketing, my love for helping seniors and my resume found the right place at the right time in Anthem Lakes. In 2013, I was introduced to the Senior Living Profession. From that moment, I have more richly enjoyed every moment of my Sales and Marketing career. I always tell my families, “It’s not just your loved one moving in, but the whole family!” This brings a new and fulfilling dimension to my life I didn’t expect.

Focusing my sales efforts now on the newest and best Senior Living community in Jacksonville, Florida allows me to bond with my families on a deeper level and build true relationships that extend past the day the resident moves into our community. I’m helping build community and it feels like my family is growing larger and larger every week.

Erica Nelson - Memory Care Director

Erica Nelson, Memory Care Director at Anthem Lakes fell in love with seniors by chance. Erica graduated from the University of North Florida with her bachelors degree in Public Administration and Public Health in 2013 and found her way to the senior living industry via a colleague's referral. Shortly after graduation she took a position as a Business Office Manager at Wyndham Lakes, a 245 bed Assisted Living and Memory care community. After servering as the BOM for three years she was promoted to the Assistant Executive Director position and oversaw the community during an ownership change. During her 5 years at the community, Erica grew a passion for caring and loving for the elderly, especially those in memory care. Erica has extensive knowledge of both operations and clinical regulations. She holds high expectations and standards when it comes to caring for seniors. Erica is as an ALZ certified trainer and FL ALF CORE certified.
